Banana Muffins

We had some week-old bananas about two days from going bad. Instead of throwing the banana's away, I decided to use them to make some simple banana muffins that take about 30 minutes to prepare and bake.

Ingredients:
3 bananas
3/4 c. sugar
1 egg
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. flour
1/3 c. melted butter

Mash the bananas in a medium-sized bowl. Add sugar and slightly beaten egg. Add the melted butter. Combine the dry ingredients, add to the banana mixture and mix lightly. Fill well-greased muffin tins about 3/4 of the way full. Bake at 400 degrees for 15 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Makes 12 muffins.

My oven only took 15 minutes to bake the muffins in silicone muffin cups and they turned out PERFECT!
